Lean Cajun-Chipotle Bison Burger with Healthy Air-Fried Vegetables

2 lbs ground bison
2 Lg head of broccoli
12 Medium shiitake mushrooms
1 XL sweet onion
1 XL fennel
4 Lg jalapeños
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp cumin
1 cup of shredded aged Manchego cheese
2 tbsp JB’s Under The Table Hot Sauce
2 tbsp Arlotta Garlic Infused EVOO

Place bison into a large mixing bowl. Add salt, pepper, garlic, onion powder, paprika,
cumin. Mix thoroughly until all spices are evenly dispersed throughout the meat. Add
JB’s Sauce and Manchego cheese. Once again mix thoroughly. Create four equally
sized 8 oz burgers.

In a separate large bowl, place large cut broccoli, sweet onion and fennel. Add whole
mushrooms heads without the stalk and whole jalapeños. Lightly toss in the garlic
infused EVOO and season lightly with salt and pepper.

Place large cast iron pan over high heat. Allow pan to heat up for 2 minutes. Add
burgers and cook to temperature turning every couple of minutes.

Place onions, fennel and jalapeños in a air-fryer and cook on 380 degrees for 10
minutes. Add broccoli and shiitake mushrooms and cook for another 10 minutes.
(If you do not have an air-fryer, you may bake in a conventional oven at 375 degrees)
Plate as seen in the picture and enjoy!!
